I don’t like almost all the commercially produced gluten free breads on the market, to be fair, I didn’t really like or eat a lot of commercially made bread before I found out I was gluten intolerant.  Sandwich bread had two functions as far as I was concerned.  I have two all-time pleasures sandwich wise.  Processed cheese slices need not apply, I make epic sandwiches with combinations of cheese – cheddar, pepper jack, colby and I hopelessly ruined those nasty little squares of rubber for the kid forever.  In the heart of summer, it allowed me to indulge in a glut of toasted tomato or toasted tomato and bacon sandwiches.  Bacon is popular here.

Grilled Cheddar Panini

I don’t have a panini press, I live in a decent sized two bedroom apartment and there’s just not a lot of room for unitaskers – the only ones we have in the place are my hubby’s coffee pot and my tea kettle.  So, what do I do.  I use my Foreman grill – it’s a great substitute panini press.  I placed  two pieces of Glutino’s Genius White Sandwich Bread and loaded it with old cheddar and colby with a sprinkle of pecorino Romano and prayed.   The picture isn’t the best, the lighting the apartment is craptastic and I took this with my cellphone and autoflash.  It’s not the best of pictures and for that I apologize.  I’m a home cook and baker, not an amateur photographer and well, you get the idea.

2013-03-16 13.50.02The verdict – Delicious.  This sandwich bread lived up to its advertisement.

It had all the things I was looking for in several important categories – taste, texture, aroma and toasting.  Taste wise, I have to say I like it much better than most gluten based bread.  It had an enjoyable flavour, a noticeable yeast flavour that wasn’t overpowered by the sugar in so many breads.  Texture, it was the right combo of chewy vs. crunchy.  A lot of gluten free breads are crumbly messes.  Note the empty plate, not a lot in the way of crumbs.  As the picture above illustrates, it browned nicely, not just searing at the contact points of the grill.

As of this writing, I’ve had three sandwiches – two grilled cheese and one smoked turkey and cheddar.  Each was much like the other.  Perfectly toasted, chewy, crunchy and each filled that niche that only those who have to go without can appreciate.   I’m looking forward to tomato season again.
